Cheesy Roasted Asparagus Recipe

Veggies anyone?

 

I realize this is the vegetable that normally you like or you hate, no middle ground with but like many other things, you may find how you cook something changes the flavor, the texture and possibly your liking for it. If you have shunned off asparagus due to not liking the taste, I ask that you give it another try with this recipe. For those of you who are lactose and don’t eat cheese or have allergic reactions to cheese, this particular recipe can either be altered to your liking or if you are like me (who is lactose intolerant) and still takes the risk of eating dairy then this might be up your alley. I figured those of you who are vegan and vegetarian may enjoy this recipe most. 

Of course a great recipe side or can be eaten on its own for a meal. 

 

Ingredients:

  • 1 lb of asparagus spears — the woody part removed
  • 3 Tablespoons of olive oil
  • 1 tablespoon of minced garlic (or 4 cloves of garlic minced)
  • 3/4 teaspoon of kosher salt
  • 1/4 teaspoon of fresh cracked black pepper
  • 1 1/4 cup of shredded mozzarella cheese

Instructions:

  1. Preheat over to 425 F, lightly grease non stick baking sheet with cooking oil spray
  2. Arrange asparagus on baking sheet; set aside
  3. In a small bowl, mix together olive oil, garlic, salt and pepper. Drizzle the oil mixture over the asparagus and toss to evenly coat
  4. Bake for 15 minutes, until vibrant and just beginning to tender
  5. Remove from oven, top with mozzarella cheese, return to oven & broil or grill until until the cheese melts and becomes golden (4-5 minutes)
  6. Serve immediately

Fully Load Burger Bowls

Make a bowl out of a burger

Ingredients needed:

  • 2 lbs of extra lean beef 
  • 2.5 teaspoons of seasoned salt
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of black pepper
  • 3 teaspoon of worcestershire sauce 
  • 4 Tablespoons of butter
  • 2 Cups of sliced mushrooms
  • 2 cups of cheddar cheese, shredded
  • 10 slices of bacon, cooked and diced
  • diced chives, bacon bbq sauce, and ranch dressing for topping

Instructions

  1. Mix together beef, seasoned salt, garlic powder, black pepper and worcestershire sauce
  2. On a baking sheet lined with foil, form 4 meat bowls using a can or jar. Set aside
  3. In a medium pan, saute mushrooms with butter, season with salt and pepper to taste & divide into 4 portions
  4. Fill each meat bowl with 1/4 cup of cheese, mushrooms, 2 slices of diced bacon, then top with 1/4 cup of cheese
  5. Bake at 350 degrees, covered with foil tent, covering for 30 minutes before serving & then topping with the diced bacon,  bbq sauce, ranch and diced chives

Now I realize this isn’t vegetarian or vegan friendly, but this is a recipe that could easily have substitutes in order to make it more vegan/vegetarian friendly, I eat meat, so many of my dishes, will contain animal product but I try to find recipes that can be manipulated to serve anyone’s appetite. BLT Wrap Recipe

It has been forever since I posted a new recipe on the blog, so I am going to try to do it more regularly like I had planned in the beginning, bare with me. The foods/recipes I choose, I choose either because I have made them before, I have tried them before (someone else made it), because they are easy enough for me to make — therefore hopefully easy enough for all of you as well, or because they interest me enough to share with all of you. Typically I get my recipes off of Pinterest, but sometimes they are of my own or family member and/or close friend. 

 

I love wraps, they are simple to make and are very filling depending on the size you make them. Not to mention you can stuff them with whatever your heart deserves, making them as healthy and hearty as you would like or as unhealthy as you please. LOL The world is your oyster when creating a wrap. This particular recipe is the “BLT wrap” — for those of you who don’t know what BLT means: bacon, lettuce, tomato BUT of course there will be added ingredients to make it extra delicious, but feel free to play around the ingredients to your liking. 

 

Ingredients:

 
  • 10 slices of bacon (cooked and crumbled)
  • 1 cup grape tomatoes (quartered)
  • dash of salt and pepper
  • 2 cups of shredded lettuce
  • 4 burrito sized tortillas
  • 3 oz of cream cheese (softened) 
  • 1 tablespoon mayo
  • 1 tablespoon of dijon mustard 

Directions:

  1. In a small bowl, combine the quartered grape tomatoes with the dash of salt and pepper
  2. Inside a another small bowl, combine the soften cream cheese with mayo and dijon mustard (mix well)
  3. In a large bowl, combine bacon, lettuce and tomato with the sauce
  4. divide the mixture evenly among the 4 tortillas 
  5. Roll the wrap tightly and cut in half on a diagonal 

As said before you may substitute ingredients to your preferences. Enjoy!

 
 

Garlic Butter Sauce Recipe

So.. I don’t know about you, but I love me Papa John’s garlic butter sauce (not a huge fan of their pizza) and I was just playing around on Pinterest, and for whatever reason, the idea to look up how to make my own garlic butter sauce intrigued me enough to MAKE IT! It was very simple & it taste good & not to mention it saves me money, lol 

For all of my garlic people out there, this recipe is for YOU 🙂

 

Ingredients:

 
  • 1 tsp garlic powder
  • 1/8 tsp salt
  • 1/2 cup butter

Directions:

  1. Melt butter on the stove on low heat
  2. Spoon off foam on top
  3. stir in garlic powder and salt until dissolved
  4. remove from heat  & enjoy!
 

Roasted Maple Cinnamon Sweet Potatoes (Recipe)

Last Saturday I missed the opportunity to share a recipe with all of you, but was able to do one on my podcast last Thursday. This particular recipe, is for anyone who enjoys sweet potatoes, personally, I do not, so I most likely will not give this a try, but my family loves it so I know they make something with similar ingredients during the holiday months. Hopefully this quick recipe will be one you share with the folks. 

 

Ingredients:

 
  • 2 sweet potatoes
  • maple syrup (preferably pure) 2 tbsp
  • cinnamon 1/4 tsp
  • nutmeg 1/4 tsp
  • pepper 1/4 tsp
  • salt 1/2 tsp
  • olive oil 1 1/2 tbsp

Directions:

  1. Heat oven to 425 degrees. Prepare a cookie sheet with parchment paper or tin foil and spray it. (or without use of parchment paper and spray it with cooking spray)
  2. Cut the sweet potatoes in cubed shaped, and place them inside a mixing bowl. Add the olive oil and maple syrup on top of them, then sprinkle the spices, mix together until the sweet potatoes are well covered
  3. Dump onto the cookie sheet and bake them for 15-20 minutes (should be tender and slightly crispy) and you will want to stir the sweet potatoes half way through cooking time.

Edema (Generalized)

Today’s blog post will be discussing, you guessed it! edema and more specifically I will keep it generalized, but do keep in mind that there are different types of it, and I will discuss them in future blog post so that everyone has an idea as to what they are if you don’t already. Now personally I have never experienced edema but I know people who have and this picture above is showing the puffyness in the feet and ankles. While this condition is something most of you have heard before, I still find that any health condition is an important one to discuss?

For starters, do you know what “edema” is? before scrolling down, guess and then let me know if you were spot on. 

What Is Edema?:

Swelling caused by fluid retention (aka excess fluid is trapped in the body’s tissues)

 

Causes of Edema (generalized)

 
  • Sitting or standing in one place for too long (gravity) because it is natural for water to get pulled down to legs and feet
  • weakening of valves in the veins
  • certain diseases can bring it about 
  • medications can cause it as a symptom
  • allergic reactions
  • pregnancy can cause it to happen 

How many of you have had Edema? what was the cause of yours? 

Symptoms: 

  • affected area is swollen
  • skin could look stretched out and shiny
  • pushing into the area with a figure for about 5 seconds and releasing can leave a dimple
  • trouble walking (if you have leg edema)
  • coughing or trouble breathing (if you have lung edema)

Treatment options:

Most people probably do not know this, but edema can be temporary or more permanent. 

  • treating the underlying diseases that are causing the edema 
  • putting a pillow under your legs when lying down or sitting for prolonged periods
  • try to not sit or stand for long periods of time without moving
  • wearing support stockings
  • sometimes having to limit salt intake is especially important
  • possibly seeing a professional and being prescribed a diuretic. 
  • protect swollen areas from pressure

Most importantly, see a doctor if you experience edema.
